Chocolate Chunk Lara Bars
We’ve been doing a lot of hiking ( read about a few of our hikes here, here, and here) this summer and have found that these little treats travel well in our backpacks. When we hike we usually take some dried meat, cherry tomatoes, bell peppers, apricots (or other fruit), cucumbers, hard boiled eggs and these Lara bars (based on the original store version). You can put just about anything in these little bars. The homemade version tastes way better than the store bought ones (and are much cheaper!). Ingredients 1/2 cup unsalted...

One of the best things about summer is all of the beautiful fresh fruit. I’ve never been a big apple and banana fan, but I love berries and nectarines and peaches. I picked up some gorgeous peaches the other day, but I didn’t want to make a whole pie or cobbler. Since we already had the BBQ fired up to cook some marinated flank steak, I decided just to throw the peaches on the grill and make up some vanilla ice cream to serve them with. Mr. Swiss Paleo pretty much licked his dish clean after this one. Best part? It was so easy to...
read moreSilky Smooth Chocolate Fudge Cake
I don’t even know if you can really call this a cake. It is so dense and silky that it’s a lot more like the inside of a chocolate truffle than a cake. But, I did make it in a cake pan, I did bake it and we did eat it to celebrate my good friend Susan’s birthday. Sounds like cake to me. I cannot take credit for the creation of this recipe. I made it once a few years ago (before I was blogging) and I scribbled the recipe down on a scrap of paper. I have no idea where I got it from originally. It’s pretty much a flourless...
read moreCinnamon Maple Cream Filled “Oatmeal” Raisin Sandwich Cookies
This cookie recipe is almost exactly like the chocolate chip cookie recipe I’ve been making for years. I got it from a Clean Eating Magazine before I was paleo. After going paleo, all I really had to alter from the original recipe was the sugar since it was already grain free. It makes amazing chocolate chip cookies, so why not add some spices and raisins and coconut to turn it into something like an oatmeal cookie? I made these for a party so the good thing was that I didn’t get to eat them all. The bad thing was…I...
read morePaleo Chocolate Orange Hazelnut Biscotti
I thought I would make biscotti since it’s one of those things I’ve never liked. I’ve never made it and I’ve only had ever had in a restaurant served with coffee. I’ve never liked it because it was so hard and crunchy and flavorless. The best dessert to make is one you don’t like (and therefore won’t eat). Right? I couldn’t have been more wrong. I loved this and wanted to eat it all. In one sitting. Without sharing. After the first stage of baking (during the slicing part…see below), I...
read morePaleo Lemon Brownies
Yes, these are brownies that aren’t brown! I’ve said it before, and I’ll say it again….Pinterest is a dangerous place! A few weeks ago I noticed some very non-paleo lemon brownies on Pinterest and I’ve been craving them ever since. The original recipe is here. I love lemon desserts and I make lemon squares for my daughter whenever she comes home (I’ll put that recipe up the next time I make them). I just love the texture of a really moist, dense brownie so I just had to try and make this recipe paleo...

A few months ago I was making some pork carnitas and I tried to make some tortillas to go with them. Well, the carnitas were awesome but the tortillas didn’t end up anything like tortillas. They were more like crepes so we filled them with fruit and ate them for dessert. This recipe is based on that tortilla failure. They are delicious. Seriously. In fact, my husband said that from a taste perspective, these are probably the most “un-paleo and most like the original” tasting thing we’ve made yet. They remind me of the...
read morePecan Cinnamon Coffee Cake
Mr. Swiss Paleo has been traveling for business for the last two weeks and staying in a hotel. He had eggs everyday for breakfast and now that he’s home, he said he wanted anything but eggs for breakfast today. This is what we cooked up instead of eggs. This is like a coffee cake in flavor but it doesn’t have a streusel topping like the coffee cakes I’ve made before. I think of those coffee cakes as more of a dessert and I wanted this to be a breakfast. Ingredients For the cake part: 2 cups almond flour 1/2 cup arrowroot...
read morePaleo Strawberry Rhubarb Crumble
We’ve had a horribly long and dreary winter this year. I am seriously solar powered and the lack of light has been getting me down. The sun finally arrived last weekend! Blue skies and warm spring temperatures. I ran right out to the store and bought some spring flowers to plant in my garden. (sadly, those spring flowers are covered by snow a week after planting) I also bought some sweet smelling strawberries and gorgeous rhubarb. You know it’s spring when you can get strawberries and rhubarb at the store. I used to make strawberry...

Mr. Swiss Paleo travels a lot for business. He does really well eating paleo while he’s away ( he especially enjoyed eating at PALEO while he was in Copenhagen), but sometimes there are challenges and good food is hard to come by. Have you ever been faced with situations like this? Lately they have been working long hours in a conference room (with no windows) and the stretch between lunch and dinner is long. The company has been catering cakes for them in the afternoons. Mr. Paleo has been drinking water and eating hard boiled eggs that...
