Paleo Junior Mint Squares

Paleo Junior Mint Squares

I love mint and chocolate together. One of my all time favorite candies used to be Junior Mints. I used to try and get my husband to go to the movies with me every weekend. He would always ask, ” Do you really want to go to the movies, or do you just want some junior mints?”  He knows me so well. I set out to make something minty and chocolaty today. I’ve been thinking about it for quite awhile now. I envisioned making my own little chocolate cups (like these)  and filling them with something creamy and minty. I actually...

Monster Cookies

I am on vacation from work this week. My husband is out of town, I already did my workout, the sky is grey (again) and I am bored. I could do something constructive like laundry or cleaning, but where’s the fun in that? Do you eat out of boredom?  I bake out of boredom, which then, of course, leads to eating. So, to cure my boredom today, I baked. It took most of my afternoon. I planned out a recipe, shopped for ingredients, baked, took pictures and then promptly took my end result over to a friend so I wouldn’t eat them all....

Dark Chocolate Dipped Sweet Potato Chips

It was just one of those days. I wanted to make a quick and easy treat and I wanted something with chocolate, but I really didn’t feel like actually making much of anything. Not only that, I didn’t have many ingredients on hand. It’s amazing what you can come up with when you’re a little desperate and craving chocolate… Ingredients 2 sweet potatoes 80 grams of dark chocolate 1/2 teaspoon cinnamon 1-2 Tablespoons coconut oil, melted sea salt What to do Peel and slice your sweet potatoes. I decided to slice...

Fig Jam

Fig Jam

I have been having a serious love affair with figs. They are my kryptonite and I keep telling my husband not to buy them anymore….but then, of course, I am secretly happy when he brings them home anyway. Most of the time I just eat dried figs right out of the bag and I haven’t done much cooking with them. I did use them in these delicious bite-sized turnovers, but that’s it. If you’ve never tried dried figs, you don’t know what you’re missing. They may look like shriveled up old man testicles, but they are...

Spiced Pear and Fig Turnovers with Cinnamon Maple Cream

Spiced Pear and Fig Turnovers with Cinnamon Maple Cream

I feel sad for this recipe. It is deserving of pictures that scream “Eat Me!!” because it truly turned out delicious. Unfortunately, the camera magic just wasn’t with me today and I was disappointed with how the photos turned out. I hope you’ll consider giving this recipe a try sometime because I know you won’t be sorry that you did. I was originally just going to use pear in my filling, but I only had one and wasn’t sure that it would make enough filling. I am having a love affair with dried figs lately,...

Paleo Dark Chocolate Cheesecake

If you’ve spent anytime on this blog, you’ve probably figured out that I love cheesecake and chocolate. We have had, after all, Dulce de Leche Cheesecake Bars, Cream Cheese Frosting and Chocolate Cake recipes featured. I decided that Valentine’s Day was the perfect opportunity to try out a chocolate cheesecake recipe. I spend a lot of time surfing the inter webs looking at food. I am not paleocentric when it comes to the sites I visit. I visit chef sites (Jamie Oliver and David Lebovitz), I visit food photography sites like...

Coconut Butter

Coconut Butter

This recipe is certainly not original and it’s also not rocket science. I love coconut. I eat far more coconut than any one woman should. I even put coconut oil in my coffee to make my own version of bullet proof java. One coconut product that I have not been able to find here in Switzerland, however, is coconut butter. Now, keep in mind, I haven’t looked all that hard. I figured this was one of those things that would be way too easy for me to eat by the spoonful. However, I have come across a recipe for a chocolate cheesecake...

Baked Stuffed Apples (Lazy Apple Pie)

Baked Stuffed Apples (Lazy Apple Pie)

I am not a huge apple fan. I will eat them, but they aren’t my favorite fruit. I like sour green apples the best. And, of course, I like apple pie. My husband came home with some apples the other day and I needed to do something with them before they got all wrinkly and old. I was far too lazy to make a pie today, so I stuffed them and baked them instead. They tasted a lot like pie in the end, so maybe I should call this recipe “Lazy Lisa’s Apple Pie Wannabe”.   Ingredients 2-4 small to medium apples (Swiss apples...

Carrot Cake Muffins with “Cream Cheese” Frosting

Carrot Cake Muffins with “Cream Cheese” Frosting

It’s my husband’s birthday and his favorite kind of cake is carrot cake. I dutifully make him a carrot cake every year just like he makes me cherry pie for my birthday. I decided to make the cake into muffins since there are only two of us at home and there is no way we need to eat an entire cake. With muffins, I can take a few over to a friend after my husband has had his fill. We make almond flour muffins fairly regularly, but these really are different than muffins. Our muffins usually contain about 1 teaspoon of honey for the...

Paleo “Cream Cheese” Frosting

The only thing I’ve ever really liked about cake is the frosting. I always wanted the corner piece with the most frosting. I’m not picky about the flavor, either. Any kind of frosting is fine by me. If I had to pick a favorite though, it would be cream cheese frosting. My husband’s favorite kind of cake is carrot cake with cream cheese frosting. For his birthday this year, I made carrot cake muffins. They would have been just muffins without the frosting. Frosting turned them into little cakes. I debated about just getting...
