Chicken Tikka Masala

Chicken Tikka Masala

I have never eaten much Indian food or been a big fan of it. My husband loves it. I’m always willing to try new foods and experiment with new ideas in the kitchen, so we decided to try making Tikka Masala. We have an old Jamie Oliver cookbook with a recipe that my husband was going to follow…”was” being the key word. We didn’t have some of the ingredients called for in the recipe for starters. Not a problem. Then, as I was on the other side of the kitchen making Naan bread, I could hear my husband saying...

Chicken Enchilada Casserole

Chicken Enchilada Casserole

One of my favorite meals is cheesy chicken enchiladas. This has been my birthday dinner for years. My husband always makes it for me and he always makes the enchilada sauce from scratch (based on an old Martha Stewart recipe from an old magazine). Of course, I haven’t had any of my beloved enchiladas since going paleo because I just haven’t been able to come up with a good tortilla recipe (if you have one, please tell me!!). I decided to go ahead and make this anyway. We just turned it into a casserole instead of enchiladas. I...

Sriracha Chicken with Limes

Sriracha Chicken with Limes

I love NomNomPaleo’s recipe for Sriracha Sauce. The last time I made it, I used it as a dipping sauce for yummy avocado fries. The sauce is good on just about anything. I make mine a bit different than the original recipe because I can’t find the right red jalapeno peppers here. Instead, I use a few little red Thai chilis and one large red bell pepper and make half a recipe. After whipping up a batch, I used it in this delicious chicken recipe (inspired by this Martha Stewart recipe). Ingredients 4 skin on/bone in chicken thighs 2...

Paleo Chicken Piccata

The thought of this recipe didn’t really have me all that excited. It doesn’t have that many ingredients and it doesn’t sound very interesting. But, oh my holy taste buds!!! It was actually really delicious. I would serve this to guests anytime. I will make it again. And again, and again. Here is my paleo version. I know I’ve had non-paleo chicken piccata before, but I sure don’t remember it tasting this good. Ingredients 4 skinless chicken breasts Salt and pepper to taste 2 Tablespoons coconut flour 2...

Greek Chicken

I had a long day at work today and I came home to a nearly empty refrigerator which meant that I had to go shopping before I could eat. I hate when that happens. I wanted to get in and out of the store quickly and I wanted to make something for dinner that would be on the table in 20-30 minutes or less. Mission accomplished on both ends. Super quick. Extremely easy. And, it was even more tasty than I thought it would be considering how easy it was. I love when I surprise myself like that! And, it reminded me of my lovely vacation to...

Sweet Potato Chicken Casserole

I have no name for this recipe. It’s just a bunch of stuff that I put together and it tasted good. How’s that for descriptive? It was really easy to make and didn’t take much time in the kitchen. If you’ve been following this blog for any time at all, you know that I don’t do complicated. Ingredients 2 chicken breasts 3 cups of Swiss chard (measured before cooking). Spinach can also be used as an alternative. 2 cloves of garlic, crushed 2 baked sweet potatoes 3 ounces (90 grams) feta cheese, divided salt and...

Blueberry Glazed Chicken

Blueberry Glazed Chicken

I came home from work tonight and was faced with a nearly bare refrigerator.  I had some fresh blueberries, some chicken,  some wilted lettuce and a head of cauliflower. It didn’t seem very promising at first. I decided to make some sort of blueberry sauce for the chicken. I had, after all, made chicken with oranges, with apricots and with cranberries before… so why not blueberries? I love it when I can throw a few random ingredients together and come up with a delicious meal. This looks gourmet and tastes gourmet, but...

Mexican Chicken Salad

Mexican Chicken Salad

Mexican food is probably one of my favorites. The way I used to eat Mexican was pretty unhealthy. My favorites were tortilla chips, cheese enchiladas, nachos and guacamole. The more melted cheese, sour cream and guacamole smothered the food was, the better. I’m happy I can still get a really good Mexican flavor in a more healthy way. This recipe is quick and easy. You can adapt it any way you like. Use the meat and salad greens that you like best. We make this with steak all the time. Sometimes we put the filling in lettuce boats rather...

Chicken, Fig and Prosciutto Rolls

Chicken, Fig and Prosciutto Rolls

I don’t think I had ever eaten a fig until I went to a dinner party at my friend Julie’s house. She served fresh figs stuffed with mozzarella cheese, wrapped in prosciutto and drizzled with balsamic vinegar. I’ve since eaten that little dish over and over again. I’ve actually developed a bit of an obsession with figs. I discovered dry figs and regularly stuff my face with them. I crave them more than chocolate. I used them to make this yummy dessert and even made some fig jam. So, this recipe is based on my love for...
