Powerful Paleo Popsicles

Leave it to me to somehow pick up the Norovirus on Christmas Eve. If you’re not familiar with this particularly nasty and highly contagious virus, consider yourself lucky. I had the questionable pleasure of getting to know this bug a few years ago, so when it reared up its ugly head post our Christmas Eve feast, I knew what I was in for. And it wasn’t going to be pretty. In a recent article about the outbreak in the UK, Carl Zimmer, awarding winning science writer for the New York Times and National Geographic stated: “Noroviruses come...

Magic Bars

Magic Bars

I love magic bars and have been wanting to make over the old traditional recipe for a long time now. Once I managed to make the Dulce de Leche sauce in a previous recipe, I realized that it was pretty much a replacement for sweetened condensed milk and could be used for making magic bars. My daughter is home for the holidays and she’s been pestering me to bake her something so I figured this would hit the spot. The Graham Cracker Crust Layer I made this same crust in a previous recipe and was really happy with the way it turned out so I...

Dulce de Leche Cheesecake Bars…oh my!

Dulce de Leche Cheesecake Bars…oh my!

Pinterest is a very dangerous place. Especially when you’re hungry. I’m always drawn to the most decadent looking non-paleo but ridiculously beautiful desserts. A few weeks back I stumbled onto Smitten Kitchens Dulce de leche cheesecake bars and I haven’t been able to get them out of my mind since. Caramel, cheesecake and chocolate..oh my! Her recipe is full of stuff I don’t eat (refined sugar, milk, cream cheese and corn syrup-gasp!), but I figured that where there’s a will (or a craving) there must be a...

Chocolate Fudge Coconut Bars

Chocolate Fudge Coconut Bars

I love coconut and I love chocolate. And I especially love them together. These bars are, for me, kind of a paleo-friendly version of a  Bounty Bar, an Almond Joy and a fudge brownie all combined into one. I will not be eating them all myself, tempting as that may be (they are really, really good). I love trying out new things and making desserts, but I absolutely believe that treats should be for ‘sometimes’, not ‘all the time’. I’ll be taking these in to work or in to Fit2Day to share. The Bottom Fudgy...

Chocolate Cake With a Surprise (Beets!)

Chocolate Cake With a Surprise (Beets!)

Our lovely fitness trainer, Julie from Fit2Day, recently had a birthday. Lisa H., one of our regulars at boot camp, contacted me asking for a recipe for a beetroot chocolate cake that would be paleo friendly so that she could make Julie a birthday cake. I found a recipe at Elana’s Pantry which would be just perfect with a few minor adjustments**. You can see the original recipe here. Beets are packed full of good vitamins and minerals. This is a great (and sneaky) way to get some vegetables into your kids. Trust me, they’ll never...

Cherry Pie

Cherry Pie

I have never really liked cake. The only part of the cake that was ever worth it to me was the frosting. I never wanted a birthday cake growing up so my mom always made me a cherry pie. My husband took over pie-making duty after we were married and carried on the tradition. I got an e-mail from my mom last week saying it was too bad I wouldn’t be able to have pie for my birthday this year (being paleo and all). Wrong! My clever husband made me a lovely cherry pie that was every bit as good (actually better) than the old traditional...

Coconut Macadamia Chocolate Macaroons

Coconut Macadamia Chocolate Macaroons

I think this might be my new favorite cookie recipe. It has everything I love in it. Coconut, macadamia nuts and chocolate. And to top it all off, these cookies are just about the easiest cookies I’ve ever made. Got a craving? You can satisfy it in 15 minutes with a hot little cookie in your hot little hands. The base of these cookies is dates. I don’t really like dates all that much (unless they’re wrapped in bacon) and I would probably never just sit down and eat them plain. They are, however, a key ingredient in many paleo...

Ginger Snap Truffle Bites

My husband Chris loves gingersnap cookies. Luckily, I had everything on hand to make a paleo version. This recipe is quick, easy and no-bake.   Ingredients 1/2 cup almond butter 1/4 cup honey 1 tsp. vanilla 1 tsp. organic blackstrap molasses* 1 tsp. ground powdered ginger (ingwer in German) 1/4 cup plus 1 Tablespoon coconut flour 3 Tablespoons ground flax seeds (Leinsamen, found at Migros and ground at home with a coffee bean grinder) 1/4 tsp. sea salt *Blackstrap molasses is not the same as the molasses that is widely available at...

Paleo Granola

Probably the question I get asked the most is “But what do I eat for breakfast if I can’t eat grains (cereal and bread)?” I used to be a huge cereal addict and could eat the stuff for breakfast, lunch and dinner. I no longer think of needing “breakfast foods” anymore though and often I just have left overs. Most people are still stuck in the breakfast frame of mind when they start out on their paleo journey and they start out by eating lots and lots of eggs. Well, when you need a break from eggs or you are just...

Coconut chocolate cups

Coconut chocolate cups

Here is a super simple and quick recipe I came up with. A nice treat for the kids (and myself) …. Ingredients: 1 package of shredded coconut (not sweetened) approx. 150g of dark chocolate (i would not go less than 70%) paper cups (small ones for bonbons)   1. For the coconut cream, I simply put the package of shredded coconut in my food processor, turn it on and walk away. It needs to blend approx 15 mins. I stop it every few minutes to scrape the coconut off the sides. After about 10 mins, you will see the coconut is turning...
