Cinnamon Maple Cream Filled “Oatmeal” Raisin Sandwich Cookies

This cookie recipe is almost exactly like the chocolate chip cookie recipe I’ve been making for years. I got it from a Clean Eating Magazine before I was paleo. After going paleo, all I really had to alter from the original recipe was the sugar since it was already grain free. It makes amazing chocolate chip cookies, so why not add some spices and raisins and coconut to turn it into something like an oatmeal cookie?
Delicious cookie sandwiches
I made these for a party so the good thing was that I didn’t get to eat them all. The bad thing was…I didn’t get to eat them all. They were totally yummy. There are so many dessert recipes I want to try out so I often will try new things rather than making stuff over again. These, however, will be made again for sure.
Ingredients
The Cookie Part
- 1 cup almond butter
- 1/3 cup honey
- 1 egg
- 1/2 cup grated( dried, shredded unsweetened) coconut
- 1 teaspoon vanilla extract
- 1/4 teaspoon salt
- 1/2 teaspoon baking soda
- 1 1/2 teaspoon cinnamon
- Pinch nutmeg
- 1/2 cup raisins
The Cinnamon Maple Cream Part
- 1/4 cup butter (or ghee)
- 2-3 Tablespoons maple syrup
- Pinch of salt
- 1/2 teaspoon cinnamon
- 1 teaspoon vanilla
- 1 Tablespoon arrowroot powder
- 1 teaspoon coconut flour
- 1 Tablespoon melted coconut oil
Instructions
For the Cookies
- Dump everything together in a bowl and mix well.
Dump it all together and mix
- It will seem runny when you are first mixing it together, but it gets thick quick.
Thick and sticky
- Drop by rounded spoonfuls onto a parchment lined baking sheet.
Ready for the oven
- Bake in a pre-heated 175 C (350 F) oven for 10-12 minutes. They are done when they are slightly brown on top.
- Remove from the oven and squish them down a little while they are still hot. I used a square of parchment paper placed over the cookie and then pressed a glass down on top of that. You can skip this step if you aren’t going to make sandwich cookies.

For the Cream Filling
- Mix everything together in a food processor and put in the fridge to thicken for 15-30 minutes.
Putting it all together
- Cool the cookies completely before spreading on the filling.
- Spread a spoonful of filling between two cookies and mush them together to make a sandwich.
- You can also just use the cream as frosting on top to make frosted cookies.
- The cookies are great without any cream as well.
