Roasted Tomatoes with Herbs

Roasted Tomatoes with Herbs
  • Sumo

There were some lovely fresh tomatoes in the store the other day so I grabbed a couple figuring I’d use them up one way or another. We grilled a marinated flank steak for dinner and I decided some roasted tomatoes would make a great side. Actually, these tomatoes are how we start our homemade tomato sauce that we always use on pizza. I’ve never eaten them just roasted like this before, but I will definitely be doing it again. They look fancy, but are so easy!

  1. Sounds like a perfect summer side dish to me!

    • Nothing beats fresh summer tomatoes 🙂 Thanks for stopping by Nicole!

  2. Hi Lisa – I’ve got tomatoes in the oven now for your soup. You mentioned above that this is how you start your sauce. Do you have a recipe of sorts for that? The garden is beginning to produce and I need to get cooking! And have you canned any of your sauce? Thank you!!

    • Hi Marcie,
No, I’ve never trying canning tomatoes or sauce before (but I’ve got homemade pickles going for the first time 🙂 ). The sauce is really simple and the recipe (of sorts) is here: http://swisspaleo.ch/the-holy-grail-a-good-paleo-pizza/ It’s basically just roast tomatoes but we throw in several cloves of garlic to roast with the tomatoes and then whiz it all together in a food processor at the end. It’s extra delicious if you also roast some bell pepper and onions to add to it (we don’t usually whiz those; we just add them in chunks). Do you have a dehydrator? You could make “sun dried” tomatoes to last through the winter as well. Enjoy 🙂
