We make pancakes about once a month, but we never make the same recipe twice. We’ve been experimenting and trying to come up with something that we really like. All of our previous efforts have been okay, but not great. Our pancakes have always turned out too coconutty, too grainy, too flat, too dry or too hard to flip. Finally, we’ve done it. We’ve found a great way to make delicious, fluffyΒ pancakes. Our daughter thought these turned out exactly like non-paleo pancakes in terms of texture. The search is over. This is the recipe I’ll stick with.

Chestnut Almond Flour Paleo Pancakes

Ingredients

  • 1 cup of chestnut flour (Kastanienmehl in German, found at reformhauser and Bio Ladens. CHF 6.90 for 350 gms)
  • 1/3 cup almond flour
  • 2 tsp baking powder
  • pinch of salt
  • 4 medium eggs or 3 large eggs (we used 4 bio Swiss eggs which aren’t very big)
  • 1 Tablespoon maple syrup
  • 1 tsp apple cider vinegar
  • 1 Tablespoon water
  • 1 tsp vanilla

What we did

  1. Mix all of your wet ingredients together in a small bowl and set aside.
  2. Sift your dry ingredients (except almond flour) together since chestnut flour tends to clump. I’m usually too lazy to sift but it is an important part of getting your pancakes fluffy so don’t skip this step.
  3. Add your almond flour to your sifted dry ingredients.
  4. Now add your wet ingredients to your dry and mix well.
  5. Heat 1 tsp of ghee or coconut oil in your pan on medium heat.
  6. Spoon your batter into your pan and cook until bubbles form before flipping.
  7. You will be amazed at how big and fluffy these turn out.

You could add in cinnamon or pumpkin pie spice to these as an option.

  1. Where do you find Chestnut flour?

    • Hi Lori,
      If you live here in Switzerland, chestnut flour is available at reform hauses and bio ladens. I bought mine at the Apfel Baum bio Laden in Uster. If you are living in the States, I would look at Whole Foods or on Amazon.

      • In the US, you can buy it in some larger grocery stores that carry a lot of specialty flours. Here, Wegman’s is one. They also sell bulk nuts and seeds, so I purchased about a pound of hazelnuts to make my own flour. It’s about 25% cheaper.

  3. Mhhh i LOVE coconut butter! I just make fresh batch yesterday, didn’t put oil at all, it take sometime but it will turn to smooth butter!
    The only way i eat it so far is, just spoon it right in to my mouth. Gone drizzle it over panckae next time i make! By the way the only pancake we make in our house is your “Chestnut Almond Flour Pancakes” Its really delicious & my husband ask for it at list one a month!

  4. This recipe was a wonderful revelation! SOO good! I wonder if you have used the chesnut flour for any other baking. It doesn’t seem very common in American paleo baking but I am sure this is an availability factor. Do you use in other baking? How do you substitute?

      I’m glad you liked it πŸ™‚ I’ve used chestnut flour in muffins before but haven’t experimented widely with it. It does bind a bit better than almond flour and it’s not as dense. It works well in combination with almond and coconut flours so you could easily use it in most baking. It does have a distinct flavor though and it’s a bit sweet so you might need to cut back on whatever sweetener you are using. I tried making a pizza crust with it once, but it was just too un-pizza like in flavor and it was too sweet. Hmmm…now you’ve got me thinking about creating a cookie with chestnut flour…

  6. I just found your site as someone recommended your enchilada recipe. I’m excited to see a paleo blog like this from Switzerland. We are currently in Grindelwald on holiday but spent a year near here 2 years ago and I’m sure no-one from the town I was in would have eaten paleo. I bought chestnut flour when I was here and loved it for the different texture. I want to try your pancakes so I hope to find some chestnut flour when I get back to Australia. Love the look of your recipes. By the way can I ask where you had the cappuccino that you posted to instagram? Sadly we have not been able to find coffee to our liking here as most cafes use UHT milk. We will be in Wintherthur/Zurich the night before our flight and it would be nice to get a coffee.       Grindewald is beautiful! I hope you are having a wonderful holiday. Load up on chestnut flour while you are here—I think I’ve heard that it’s quite expensive and hard to get in Australia. We have started adding a bit of coconut milk to this pancake recipe which makes it even better (not sure how much since we rarely measure anything πŸ™‚ ). Experiment with it and see how you like it. I had coffee at Cafe Henrici in the Niederdorf old town area of Zurich http://www.cafe-henrici.ch/ I don’t get cappucino very often and usually just get a cafe creme (black coffee even though it says creme). There are so many great little cafes around town, but this one has been written up as ZΓΌrich’s best coffee. I just go because I like the atmosphere. Enjoy the rest of your trip and safe travels on your way back home πŸ™‚
