Lemon Artichoke Dip/Sauce/Pesto

I have a few pot luck get- togethers coming up soon, so I’ve been trying out a few different recipes and thinking about what I might ┬ábring. One of the things I whipped up for practice was this lemony artichoke dip. It makes a very tasty dip for vegetables or these paleo crackers. I think it would also make a nice spread inside of a lettuce leaf with some chicken and veggies for a paleo lettuce roll-up. It would probably also be good on some fried eggs. I might try dipping chicken breasts in it and then coating them in almond flour before frying. See all of the things you could make with this?
