Chicken Cacciatore

I am so lucky to have such an awesome husband. He has always been very supportive of my lifestyle choices and the many, many diets I’ve tried over the years. Although he has never embarked on any of the crazy eating plans/diets I’ve been on, he has always been willing to make meals that would follow whatever I was or wasn’t eating. Until, of course, paleo came along and changed our lives forever. I started out on my own, but he joined me not too long after that (smart guy…waited until I was doing something sensible to join me).

My guy is great in a lot of ways (he kills spiders for me, does stuff around the house I don’t like to do, helps me with my computer and camera questions and when we had a dog–he was the official pooper-scooper). But even better than all that, he can cook. I mean REALLY cook.

Here is the latest thing he cooked up for me. I am one lucky girl 🙂

Ingredients (serves 4)

What to do

 

  1. Cut each chicken breast in half and season with salt and pepper.
  2. In a large saucepan, brown chicken in ghee over high heat. Set aside.

  3. Lower heat to medium and in same pan brown bacon. Add onions, peppers, mushrooms and garlic and cook until soft.

    Saute the chopped stuff

  4. Add wine (or broth) and tomatoes and stir to combine. Return chicken and any juices to pan and push it down into the sauce. Place whole Rosemary sprigs on top.
  5. Bring mixture to a boil, then reduce heat, cover and simmer for one hour.
  6. Remove chicken and rosemary (discard sprigs at this point) from pan and add tomato paste to the sauce. Bring sauce to boil stirring constantly. Return chicken to sauce remove from heat.

  7. Serve over zucchini noodles or spaghetti squash.

    Dinner!
